These apple popsicles are such a great way to enjoy fall flavors during the warmer months. They are completely vegan and combine fresh apples, dairy-free yogurt, maple syrup and cinnamon. So easy, quick and healthy!
To a blender, add all the ingredients and blend until smooth.
Pour the mixture into your popsicle mold (you should be able to make 8 large popsicles) and freeze for at least 5 hours before unmolding.
To unmold, run the popsicle mold under warm water until you can pull the popsicles out.

I highly recommend using a silicone popsicle mold, they make the unmolding process so much easier! Simply run some warm water over the silicone mold until you can gently pull the popsicles out.Wait for the last minute before slicing your apples so they don't have time to turn brown before blending (the lemon juice will help to keep a bright color!).
Taste the mixture straight from the blender! You can add more cinnamon or maple syrup depending on your taste.
