This ultra-easy 2-ingredient olive oil caramel sauce is the best last-minute sweet topping you can whip up in less than 5 minutes, and without any cooking or fancy equipment. Pour over ice cream, cake, drinks or your morning pancakes and enjoy the light sweetness plus a nice boost in healthy fats.
Add the oil and maple syrup to a medium bowl and whisk vigorously for 3-5 minutes to create an emulsion. Taste and add a pinch of salt if needed.
Serve over ice cream, cake, lattes, pancakes and more. Make sure to shake/stir before serving since the oil and syrup separate after resting.

Storage: keep the caramel sauce at room temperature for up to 2 days or in the fridge for up to 10 days. The olive oil tends to firm up if colder, which can help make for a thicker caramel.
