These chocolate strawberry yogurt clusters are going to be your next favorite frozen treat! They include fresh strawberries, creamy vanilla yogurt, maple syrup for sweetness and a crunchy chocolate shell, and they are so easy to make! Use dairy-free yogurt for a vegan recipe and they are naturally gluten-free.
In a medium mixing bowl, combine the yogurt, strawberries and maple syrup (if using).
Use 2 spoons to transfer the mix into clusters over a baking sheet covered with parchment paper. You should have about 15 clusters. Transfer to the freezer until completely frozen.
In another mixing bowl, add the chocolate chunks and coconut oil, then melt using the microwave. You can start by warming for one minute, then for additional 20-30 seconds at a time until the chocolate chips are soft. Then, let them rest for 1 minute before stirring until smooth.
One frozen yogurt cluster at a time, cover them with the melted chocolate and transfer them back over the backing sheet. Keep going until all the clusters are covered. If you want to use less chocolate, then you can melt half the amount of chocolate chips and simply drizzle the melted chocolate over the clusters.
You can enjoy the chocolate-covered clusters right from the freezer or let them thaw for about 15 minutes before enjoying.

Notes
Less chocolate (and less sugar): you can drizzle a little melted chocolate over the clusters instead of completely covering them. In that case, cut the chocolate chips and coconut oil about in half.
Do not add extra moisture to the strawberry yogurt mix or it will thin out the consistency. This would make the cluster harder to shape. So, be sure to pat dry the strawberries carefully once you clean them. If your mix is too thin, then you can add a little bit of nut butter to thicken the yogurt.
You will need to work fast when covering the clusters with the chocolate. Because the yogurt clusters are frozen, the melted chocolate hardens and sticks to it quickly and easily! If you go too slow and keep dipping the clusters in the warm chocolate, then you risk creating a layer that's too thick.
Transfer the cluster to parchment paper so you can easily remove them once frozen.
The size of the clusters does not matter much since you won't bake them. You can make smaller or larger ones, although I think smaller clusters are easier to handle when covered with chocolate.
Once completely frozen, the clusters are pretty hard and crunchy. For a smoother result, then let them briefly thaw for about 10-15 minutes before enjoying!
