This chocolate cashew mousse recipe is easy to make, packed with amazing dark chocolate flavors and is secretly healthy. All you need are 5 wholesome ingredients and you can whip up a batch in 20 minutes! Fully vegan and dairy-free.
Soak the cashews either in cold water overnight (on the counter at room temperature) or in boiling water for 10-15 minutes. Drain well.
To a blender, add the drained cashews, cacao powder, maple syrup, vanilla extract and plant milk. Blend on high until smooth and creamy, which can take a few minutes. Make sure to scrape the bottom and walls of the blender with a spatula + blend again for a very smooth consistency.
Divide in small jars (optional), cover and transfer in the fridge. Chill for at least an hour before enjoying. Serve as is or garnish with oat whipped cream, berries, chocolate chips or chopped nuts.

It is important to soak the cashews before blending! This helps soften them so they can be blended to smooth. You can either soak in cold water overnight (or about 12 hours) at room temperature or soak them in boiling water for 10-15 minutes.
This recipe will have better results if using a high-speed blender like Vitamix. If you have a regular blender, then you will have to blend for longer and take a few breaks to scrape the bottom and sides + blend again to ensure the mousse has a very smooth texture. Also, make sure to soak the cashews for long enough!
For a light and airy mousse: keep blending for longer even after the mixture is smooth to encourage air to be trapped within the mix.
Chill the mousse before enjoying! You will likely have to blend for a little while to reach the desired texture, which typically also warms up the mixture. For that reason, plan ahead so you have enough time to chill the mousse in the fridge before enjoying it.
