🗒 Ingredient notes (+ substitutions)

- Coconut milk: use full-fat coconut milk that's unsweetened for the best result. I like the organic coconut milk from the brand Thai.
- Blackberries: choose plump and sweet blackberries for the best flavor. Can be swapped for other berries, especially blueberries.
- Sugar: I used cane sugar, but you can use regular white sugar. I do not recommend swapping for maple syrup or brown sugar.
- Vanilla: optional, you can skip it if you don't have any.

🍽 How to make vegan blackberry ice cream

Step 1: Add the coconut milk, sugar, blackberries and vanilla extract to your blender.

Step 2: Blend until smooth and creamy.

Step 3: Pour the creamy mixture into your frozen ice cream machine container.

Step 4: Churn until desired consistency, about 20-30 minutes. Enjoy right away or transfer to the freezer for later.

💡 Helpful tips
- Be sure to freeze your ice cream machine container before using! You can freeze it the night before, or do like me and keep it at all times in your freezer so it is always ready to use.
- If the ice cream is still a little too soft for your taste after churning for 30-35 minutes, then you can also transfer it to your freezer for an extra hour before enjoying it.
- If your fruit isn't sweet enough or is too tangy, then you can add a little extra sugar.

❗️Storage tips
This homemade blackberry coconut ice cream can be kept in the freezer for up to 2 weeks. If you store it for longer than that, the ice cream might start to create small crystals that will affect the overall texture. That being said, the ice cream is going to be good for up to 2 months if well covered.
Just like store-bought ice creams, if not serving right away, then you might want to take the ice cream out of the freezer for a few minutes before serving so it is softer and easier to scoop.

Yes! You can briefly thaw them so they blend more easily, but it should work just as well as using fresh berries!

Vegan Blackberry Ice Cream
Equipment

Ingredients
- 15 oz coconut milk unsweetened and full-fat
- 1 cup fresh blackberries you can also use frozen blackberries
- ⅓ cup sugar I used cane sugar, regular white sugar works too
- 1 teaspoon vanilla extract
Instructions
- Add the coconut milk, blackberries, sugar and vanilla extract to a blender, then blend until smooth and creamy.
- Pour the mixture into your frozen ice cream machine container, then churn for about 25 minutes or until the desired consistency. Enjoy!
